Executive Chef Boris Meyer has worked at many a haute cuisine hotspot, including Michelin starred and Gault & Millau toque-awarded establishments: Noma in Copenhagen, Vendôme in Bensberg, Per Se in New York and Herzog’s in New Zealand. Nature as a source of healing, a commitment to quality and, above all, curiosity and a passion for discovery have always played a pivotal role in his work. It was mainly during his international roles that Meyer, who comes from Lower Saxony in Germany, realised that food is as much about health as it is about taste. Since then, he has experimented with herbs, flavours, techniques and textures and now uses nature’s wealth of healing resources to create healthy and enjoyable Cook for Health and Green Fine Dining dishes.

Breakfast provides the energising foundation for an active day. With this in mind, we have devised your Cook for Health breakfast as the freshest start to the morning. Check your personal Health Chart’s recommendations to make the choices that fit your goals, needs and nutritional level (I, II or III). To help you keep track of your healthy nutrition, you’ll find breakfast foods presented at the buffet, or – especially at Level I – served at your table. Your health concierge will be delighted to advise and assist.
For lunch, opt for the restaurant, where you’ll be served a meal that meets your nutritional level. Alternatively, head for the iCook Atelier for a more casual lunch experience. Come in your bathrobe – that’s absolutely fine here – and take your pick from the buffet as you enjoy the experience of healthy nutrition with all of your senses at our iCookery stations.

Lipid metabolism is the process by which the body breaks down fat in order to receive energy. When carbohydrate intake is low, the body switches to lipid metabolism by converting fat into ketones, which are then used as an energy source.
