‘Cuisinez-vous français ? Do you cook French?’ It’s a question Phillip Schnabel has been asked countless times – unsurprisingly, given his foundation in the classical French culinary tradition. The influence is unmistakable in his dishes: a depth of aroma and structure that is, in his words, ‘complex, but never contrived’. His passion for creating original dishes was sparked under the mentorship of Christian Lohse. Since then, his culinary identity has expanded to include a deep love for sushi, Mediterranean flair and an uncompromising commitment to quality. The result? Dishes that resonate with aromatic depth and richly textured flavour emotions. Or perhaps that’s where it all begins: ‘Every new dish starts with a creative spark inspired by flavour’ says Phillip Schnabel, who previously shaped the culinary direction at ESSENCE in Munich before joining Aurea as well as being awarded a Top 50 Chef by Schlemmer Atlas.. ‘From there, the dish is constructed top-down – guided entirely by taste, right through to the final bite.’
